If you follow me on Instagram, you probably already know that I was in charge of Christmas dinner this year. Mom had surgery the week before Christmas and even though everything went well and she was back home, she was still recovering and not at 100% yet to be able to cook a full Christmas dinner for everyone. So I told her if she let me use her kitchen then I would give it a go and see if I could make something work.
I’ve never cooked a full holiday dinner before and didn’t want to bite off more than I could chew, nor did I want to spend all day in the kitchen (seeing as I’m not a huge fan of cooking yet). So, after some research I narrowed it down to a few recipes that I thought I could make work. Here was the menu (and I’ll link to the recipes):
– Honey Baked Ham (Mom and Dad actually pre-ordered this and picked it up on Christmas Eve so all I had to worry about for this was to put it in the oven and heat it up.
– Garlic Ranch Potatoes – These were delicious and super easy! I will definitely be making these again for David.
– Broccoli Casserole from Scratch – Delicious. A little more involved to prepare, but that’s probably because we made it from scratch. I left out the mushrooms because I don’t like mushrooms. And if I’m the one doing the cooking, I’m going to cook something I like. haha! Would make again.
– Apple Cranberry Salad – This one was interesting. I loved the goat cheese and cranberries (I left the pecans on the side for those who like pecans…I do not), but I think next time I try less lemon juice in the vinaigrette.
– Rolls
– Oreo Cheesecake Chocolate Cake (for dessert, obviously) – We had the traditional apple pie at Thanksgiving, and I wanted to try something different for Christmas. This thing was delicious! But, boy was it rich in chocolate. It’s a two layer cake as well so it ended up being a big cake…way more than we needed. But it was delicious. I would make it again, but either make sure there are more mouths to feed or figure out how to cut the recipe in half.
